Banana Oat Pancakes

These delicious Banana Oat Pancakes are one of my absolute favourites. They are super filling and keep you full for longer plus you can make them ahead of time to make that morning rush a little easier 

MAKES: 3 PREP TIME: 5 MIN  COOKING TIME: 5 MIN

INGREDIENTS: 

1 ripe Banana

2 eggs

1/4 Cup of oats

A splash of cinnamon 

Handful of berries, if using frozen berries make sure they are defrosted before adding them in 

DIRECTIONS:

  • Mash your banana in a bowl then add the eggs, oats & cinnamon
  • Give it a good whisk around with a fork until it's all incorporated. Then add in your berries and mix again
  • Add a little bit of butter in a fry pan on a low temp, you don’t want it high it will burn the outside & not cook inside
  • Cook for approx 1-2 mins until it starts to firm up all over & the flip it. I find it much easier to flip with a plate.
  • Cook on the 2nd side for another 1-2 minutes or so until cooked through

NOTES:

You will get about 3 pancakes out of this, just double the recipe if you want more

Eat them hot or cold and I sometimes like to top it with greek yogurt & more berries

These are not a sweet pancake so you can add honey or maple if you want the sweetness it’s up to personal taste and I love it as is

You can also make these without the berries as well they are delicious on their own
