Cookies & Cream Cupcakes Using Our Vanilla Cupcake Baking Mix

Made with our Bake It by Giovannellis Vanilla Cupcake Baking Mix, this bake is simple, quick, and seriously tasty. These were always a best-seller when I ran my cake business and they were a hit at dinner last Friday night too when ai brought them for dessert!
Whether you crush your Oreos finely or leave them a little chunky, they work beautifully either way. The combination of delicious vanilla cupcakes mixed with oreos and our signature fluffy buttercream icing is always a winner, especially for birthdays, parties or weekend bakes.
What You’ll Need
🧁 1 pack of Bake It by Giovannellis Vanilla Cupcake Baking Mix (includes buttercream icing) and wet ingredients on the pack.
🧁 16 Oreo cookies (about 1.5 packs)
How to Make Cookies & Cream Cupcakes
1. Mix your cupcake batter:
Make your Vanilla Cupcake Batter as per the instructions on our baking mix. Once it’s all mixed well, crush 8 Oreo cookies (I pop mine in a bag and gently bash them with a rolling pin) and add them into your cupcake batter. Mix again for 20–30 seconds just until combined. You want to make the batter first and add the Oreos at the end.
2. Fill & bake:
Scoop your mixture into cupcake liners, I used our rainbow silicone liners and bake as per the packet instructions until cooked through. Set aside to cool completely before icing. You may get a couple of cracks from the added cookies but don't stress it's normal.
3. Make the buttercream icing:
Prepare your buttercream using the included mix and instructions. Once it’s fully mixed and smooth, stir through another 8 finely crushed Oreos (I used a food processor for this part to get a smoother texture). You can leave them chunkier if you like though.
4. Ice & decorate:
Once your cupcakes are cool, pipe or spread your cookies & cream buttercream on top. If you’re using a piping bag, be mindful that larger cookie chunks can block the tip, so blitzing them finely is helpful or just use a knife. Top with a drizzle of melted chocolate and half an Oreo if you want to go all-out or leave them plain.
