Banana Muffins

Got our delicious Banana Bread and are ready to bake them up? Your instructions are below incase you need them

What you need to add:

120g of just melted butter

2 Eggs

¼ Cup of Buttermilk or milk 

3 Ripe Bananas

1 tsp of Vanilla Essence

How to make our delicious Banana Bread:

  • Preheat oven to 175°C and coat your 9.5 x 5-inch loaf tin with butter or cooking spray and line with non-stick baking paper 
  • Melt butter in a microwave safe dish in 30 second burst until it is just melted, stir well between bursts. You want it to be just melted, not hot and bubbling! 
  • Crack eggs and give them a good mix with your fork to break them up, this way they will incorporate better into your mixture. 
  • Mash ripened bananas well with a fork and add in the just-melted butter
  • Add your Bake It banana bread mix, eggs, milk and vanilla. Mix with a until all ingredients are combined then pour into prepped tray. If you want some extra banana flavour add sliced of chopped up ripened bananas to along the top in a line and ad a little bit sugar to caramelise them. 
  • Bake for 55 minutes or until your skewer or fork comes out clean. Check your Banana Bread after 30-40 minutes and if you find its browning to quickly cover the top with foil
  • Leave for at least 10 minutes to cool slightly in the tin before transferring to a cooling rack. Let your Banana bread cool completely before slicing, if you slice it while it’s still hot it is likely to become crumbly and hard to slice, it needs time to cool so that you get a nice clean piece each time. Store any leftovers in an airtight container, as there are no additional nasties it will last up to 3-4 days. This is a great freezer friendly addition if you are not eating all the bread right away, you can freeze it whole or simply slice it up and store in individual freezer friendly bags. 

If you are making these into muffins follow these steps below instead of adding your mixture into your load tray 

  • Prep your cupcake tray with 18 cupcake liners, you don't need muffin ones the cupcake size liners are perfect. Once mixed fill your lined tray with 3/4 full of mixture in each cupcake liner, don’t overfill them or they will spill out as they rise up
  • Give your tin a light tap on the bench to level them out
  • Bake at 175°c for 15 mins or until cooked through

 

  • Taste tip! Banana bread is delicious fresh but is super delicious warm. You can give them a quick zap in the microwave or pop them in the toaster then add your favourite butter or spread before eating.

How to make it into banana muffins

🍌Prepare your Bake it by Giovannellis Banana Bread Mix as per the instruction card but instead of putting it in the loaf tin we are going to line a cupcake tray

🍌Line a 2 cupcake trays with 18 cupcake patty's or silicone cupcake moulds and fill them just over half way with banana mixture.

🍌Bake for about 15 minutes or until they are baked through. You can test this by pressing on the top of the cake and if it springs back up it is ready.

That's it super simple and easy

*if you only have 12 cupcake tray just bake the first 12 and then take them out and bake the second 6 batch

How to make it into a banana bread sheet cake

🍌Prepare your Bake it by Giovannellis Banana Bread Mix as per the instruction card and preheat oven to 175°C but instead of putting it in the loaf tin we are going to pop it in a 9"

🍌Line a square baking 24cm wide & 5cm high baking tin I used my brownie tray for this. Line this with a little butter and then baking paper so your cake comes out cleanly.

🍌 Bake for approx. 20 mins or until baked through. You can test this by pressing on the top of the cake and if it springs back up it is ready.

How to make choc chip banana bread muffins

🍌Prepare your Bake it by Giovannellis Banana Bread Mix as per the instruction card but once you have added all your ingredients in then add in about 1 cup of Choc Chips in and give it a good mix

🍌Line a 2 cupcake trays with 18 cupcake patty's or silicone cupcake moulds and fill them just over half way with banana mixture.

🍌Bake for about 15 minutes or until they are baked through. You can test this by pressing on the top of the cake and if it springs back up it is ready.

That's it super simple and easy

You can add milk, dark or even white if you wanted too, a caramilk might be nice with the banana muffins

How to make it into mini banana bread muffins

🍌Prepare your Bake it by Giovannellis Banana Bread Mix as per the instruction card but
🍌 Get a mini cupcake tray & mini cupcake liners & fill each with a good teaspoon of mixture, yep just 1 teaspoon in each
🍌 If you only have 1 mini tray you can make some bigger banana bread muffins at the same time, I made 24 minis and 9 bigger muffins

Bake for about 8-10 minutes or until they are baked through. They won't take long. You can test this by pressing on the top of the cake and if it springs back up it is ready.

That's it super simple and easy

How to make cinnamon icing

Ingredients: 

🧁 100g of room temp butter
🧁 200g of Soft Icing Mixture (the pink one from the CSR brand)
🧁 1 tsp of Vanilla
🧁 1.5 tsp Milk
🧁 3/4 of a teaspoon of Ground Cinnamon (not cinnamon sugar) 

We follow our buttercream instructions on how to make our cinnamon buttercream: 

  • Take your butter out of the fridge and let it come to room temperature
  • Once the butter is room temp chop into small pieces and add it into your stand mixer and mix on medium – high speed for 3 minutes until the butter is light in colour and looks smooth. Scrape down the bowl halfway and again once it is finished mixing so the butter isn’t sticking to the bottom. This step is called ‘creaming the butter’
  • Add your Icing mixture to your bowl in about 3 equal parts so you don’t get an icing explosion, mix for about 30 seconds after each addition before adding the next portion of icing
  • Once the 3 parts are added, add your vanilla and milk (you can use any milk substitute or water if needed but it’s nicer with that dash of milk)
  • Mix on medium speed for 1 minute, stop to scrape down the sides and base of the bowl again to make sure all the ingredients get mixed properly and nothing is stuck to the sides
  • Mix on medium – high for at least 5 minutes and stop halfway to scrape the sides and base of the bowl
  • You want the butter and icing sugar to be completely incorporated and mixing for at least five minutes. This step is essential to get the right flavour and perfect buttercream texture
  • You will notice the buttercream become lighter in colour and it should have a perfectly balanced taste that’s not too sweet and not too buttery
  • If you find any butter hasn’t incorporated properly just give it a mix with your spatula or spoon, it could just be getting missed by your machine
  • Before decorating make sure your baked goodies are completely cold, you don’t want even a little bit of warmth otherwise your icing will melt and start slipping off
