Banana Bread Instructions

What you need to add:

120g of just melted butter

2 Eggs

¼ Cup of Buttermilk or milk 

3 Ripe Bananas

1 tsp of Vanilla Essence

How to make our delicious Banana Bread:

  • Preheat oven to 175°C and coat your 9.5 x 5-inch loaf tin with butter or cooking spray and line with non-stick baking paper

     

  • Melt butter in a microwave safe dish in 30 second burst until it is just melted, stir well between bursts. You want it to be just melted, not hot and bubbling!

     

  • Crack eggs and give them a good mix with your fork to break them up, this way they will incorporate better into your mixture.

     

  • Mash ripened bananas well with a fork and add in the just-melted butter

  • Add your Bake It banana bread mix, eggs, milk and vanilla. Mix with a until all ingredients are combined then pour into prepped tray. If you want some extra banana flavour add sliced of chopped up ripened bananas to along the top in a line and ad a little bit sugar to caramelise them.

     

  • Bake for 55 minutes or until your skewer or fork comes out clean. Check your Banana Bread after 30-40 minutes and if you find its browning to quickly cover the top with foil

  • Leave for at least 10 minutes to cool slightly in the tin before transferring to a cooling rack. Let your Banana bread cool completely before slicing, if you slice it while it’s still hot it is likely to become crumbly and hard to slice, it needs time to cool so that you get a nice clean piece each time. Store any leftovers in an airtight container, as there are no additional nasties it will last up to 3-4 days. This is a great freezer friendly addition if you are not eating all the bread right away, you can freeze it whole or simply slice it up and store in individual freezer friendly bags. 

If you are making these into muffins follow these steps below instead of adding your mixture into your load tray 

  • Prep your cupcake tray with 18 cupcake liners, you don't need muffin ones the cupcake size liners are perfect. Once mixed fill your lined tray with 3/4 full of mixture in each cupcake liner, don’t overfill them or they will spill out as they rise up
  • Give your tin a light tap on the bench to level them out
  • Bake at 175°c for 15 mins or until cooked through

 

  • Taste tip! Banana bread is delicious fresh but is super delicious warm. You can give them a quick zap in the microwave or pop them in the toaster then add your favourite butter or spread before eating.
