Easy Royal Icing Recipe

Royal Icing is one of those Recipes that can seem super scary to make and have a reputation for being hard to make. You usually need to play around with adding water to get the right consistency which can be a bit tedious, with not too much not too little. But never fear because we have the recipe for you to make all your Christmas Cookie Decorating a breeze! 

You may have got our Royal Icing Baking mix as part of our Gingerbread House Baking Mix. Maybe you want a little extra or want to decorate your Gingerbread Cookies so we are sharing our Royal Icing Recipe with you so you can make extra and decorate all your holiday cookies. 

I also tested using Icing Sugar mixture and pure icing sugar and while it may not be the one that is recommended to be used I honestly preferred the icing sugar mixture the pink kind from CSR if you are in Australia. It made the icing smoother I found and tasted nicer

Ingredients: 

  • 160g of Icing Sugar Mixture 
  • 1 Egg White 
  • 1/2 Tsp of Vanilla Essence 

How to make your icing as per our instruction cards that come with all our baking mixes: 

Take your Egg out of the fridge to let them come to room temperature

Separate your Egg white from the yolk and place the egg white in the mixing bowl, if using a stand mixer use the balloon whisk attachment or a handheld mixer with beaters

Mix egg white for about 1.5 minute until it starts to become bubbly and foamy

With your mixer on low speed slowly add in your icing sugar 1 tbsp spoon or so at a time and mixing for about 10-15 seconds after each spoonful

After adding all the icing sugar, scrape down the sides of the bowl, then add the vanilla essence. Continue mixing for about 10 minutes until the mixture becomes thick, shiny, and forms stiff peaks stopping halfway to scrape the bowl down

If you want to colour your buttercream you can add some food colouring (we recommend gel or powder) a few minutes before your icing is finished so it can mix through and incorporate fully. 

Add the mixture to your piping bag and twist the open end securely in your hand to prevent the mixture from spilling out. 

 

 

Now the fun part decorating time! I always get everything ready to go for example if you are using any lollies, sprinkles etc you can get them ready to go so once you start you can enjoy decorating and not worry about having to open lollies etc. 

Once you are ready to go cut a small amount of the bottom of your piping bag, you only want to cut a couple of mm off the bag. You can always cut more off but you can't put it back on and if the hole is too big it will pour out too fast. So cut a little test it out and cut more if needed. Also use scissors to cut don't use a knife so that it is a clean cut.
