- 100g Nuttelex (or another dairy-free butter option; I’ve only tested this with Nuttelex)
- 2 eggs (room temperature)
- 1 tsp Vanilla Essence
Instructions:
- Follow the instructions on the Vanilla Cupcakes Baking Mix package as usual.
- When creaming the butter, you may find Nuttelex softer than regular butter, so you might not need to cream it as long.
- Combine the remaining ingredients as instructed, bake, and enjoy!

What about the Icing?
For our Christmas Party I made the usual buttercream icing for most of the cupcakes them put a few aside for my nephew and made him Dairy Free Buttercream icing by switching the butter in the recipe to nutlex. That way everyone who wasn't dairy free still enjoyed the cupcakes and the dairy free ones were perfect as a special cupcake. You can easily make the whole batch dairy free but it was just a little added touch to do half half so everyone enjoyed them.
The icing you see piped in this picture is dairy free so you can get the same beautifully pipped icing with dairy free buttercream as you would from regular buttercream
