Raspberry & Lemon Cupcakes: A Fresh and Fruity Twist on Our Vanilla Cupcake Mix

This one is light, zesty and full of flavour, the perfect balance of sweet raspberries and refreshing lemon.

Whether it’s for a brunch, lunchbox, or just a sweet bite in the afternoon, these cupcakes are as simple to make as they are delicious. And we’re showing you just how easy it is to bring this one to life using our Vanilla Cupcake Baking Mix.

What You’ll Need:

  • 1 pack of Bake It by Giovannellis Vanilla Cupcake Baking Mix grab it here (btw is comes with the Buttercream Icing Mix too)
  • Your wet ingredients as per the pack
  • 1 fresh lemon (you’ll need zest and juice)
  • Raspberries (broken into smaller pieces I used frozen)
  • 1.5 tbsp Raspberry Jam (we love using St Dalfour because it’s free from added sugar which is what you want for the icing)

Your baking mix already comes with real vanilla buttercream icing mix no need to grab extra!


How to Make Raspberry & Lemon Cupcakes:

1. Prepare the Cupcake Batter

Make your Vanilla Cupcake Baking Mix according to the instructions on the card.
When adding your wet ingredients, also add:

  • 1 tbsp lemon zest
  • 1 tbsp lemon juice (approx. the juice of half a lemon)

The batter may be just slightly thinner th,is is completely fine.

2. Fill & Bake

Scoop your cupcake batter into your reusable Bake It by Giovannellis silicone cupcake patties or any cupcake liners you have on hand. Grab some silicone ones here 
Press a piece or two of fresh raspberry into the top of each cupcake. You can add more raspberries if you want a fruitier burst.

Bake as per the usual instructions.

3. Make the Raspberry Buttercream

While your cupcakes cool, prepare your Vanilla Buttercream Icing Mix (included in your baking mix pack).
Once mixed, stir in 1.5 tbsp of raspberry jam until it’s fully blended and lightly tinted pink. This adds a fruity flavour without needing food colouring or artificial flavour.

4. Ice and Enjoy

Once your cupcakes are completely cool, ice as you like, pipe or spread with a spatula, whatever works for you.

Then serve and enjoy! These are perfect for sharing (or not 😅).
