This is a question we get asked all the time "how do you get your buttercream so white".
The simple answer it's all in the way you mix it and how long for.
Our baking mix range comes with fantastic instructions on how to mix your buttercream so that you get that beautiful white, light and fluffy texture.
But since this is such a popular question we thought we would run you through how to achieve this.
The Method
- First up you want your butter at room temperature, if it's too hard it won't incorporate properly and will take much longer to mix so take it out before you are ready to use it and let it sit out for about 30 mins. You can also cut it into cubes straight away if you want to speed up the process
- Then cream (mix) your chopped butter for about 3 minutes until light and fluffy
- Start to add in your Bake it by Giovannellis Buttercream Baking Mix in 3 parts and mix for 30 seconds in-between each addition this is to make sure your icing sugar starts to incorporate with the butter properly
- Once all 3 are added then add in your vanilla and milk
- Mix for 1 minute and scrape down the sides of the bowl
- Then mix on medium speed for a good 5 minutes, you can stop halfway through to scrape down the sides and base of the bowl so you don't leave any butter or icing behind
And that's you get that beautiful light, fluffy and white buttercream. It's all about making sure that the icing and butter are incorporated and have had time to mix so that it becomes white.
In the picture the icing on the left I took out once I had added all the icing, wet ingredients where as the one on the right is from when we had finished mixing. One looks yellow and one looks white.
The other reason you want to mix it for a long time is so the flavour is right. If you only mix for a couple of minutes you may find it tastes either like butter or super sweet and nobody wants that!
