What You’ll Need:

🧡 1 packet of Bake it By Giovannellis Shortbread Baking Mix (you’ll need 150g of baked cookies for the base and a couple for the top) 
🧡 1 block of Philadelphia Cream Cheese (the firm one, not the tub)
🧡 60g whipping or heavy cream
🧡 55g icing sugar
🧡 ½ tsp vanilla essence
🧡 50g melted chocolate (plus a few extra squares for decorating)
🧡 1–2 shortbread cookies (for decorating)
🧡 A pack of speckled Easter eggs
🧡 40g Butter for the base 
🧡 Silicone cupcake moulds or patty pans 

How to Make Them:

1️⃣ Bake the shortbread – Prepare your shortbread mix according to the instructions. Cut any shape (you’ll be crushing them later), bake and allow to cool completely.
2️⃣ Melt the chocolate – In 30-second bursts in the microwave, stirring in between. Once melted, let it cool a bit. If the bowl is too hot, transfer the chocolate to a new bowl so it cools faster.
3️⃣ Make the cheesecake filling – In a mixing bowl, combine cream cheese, icing sugar, vanilla essence. Mix for 1–2 minutes until smooth, scraping down the sides halfway. Add the whipping cream and cooled melted chocolate, then continue mixing for 2–3 minutes until everything is silky smooth.
4️⃣ Make the base – Crush your cooled shortbread cookies in a bowl (by hand or with a rolling pin). Mix in the melted butter until combined. Spoon about 1 tablespoon of the base into each cupcake mould and press down with a spoon to smooth it out.
5️⃣ Assemble the cheesecakes – Add 1 tablespoon of cheesecake mixture on top of the shortbread base in each mould. Cover and place in the fridge for at least 3–4 hours to set (overnight is best).
6️⃣ Decorate – Once set, drizzle melted chocolate on top. Add crumbled shortbread and top each with a speckled Easter egg.
