These are all a match made in heaven 😍 the delicious buttery shortbread mixed with a little white chocolate & crushed up pistachios 😋 it is perfection
Plus how pretty are they!
How to make them:
❄️ Make your Bake it by Giovannellis shortbread cookies as per the instructions and cut into your snowflake shape (the cookie cutter is linked here)
❄️ Let them completely cool down then melt some white chocolate you only need about 2 - 3 rows and melt in 30 second burst mixing well in between each addition so that it melts properly and quicker
❄️ Chop some pistachios up into quite small pieces about 2 tbsp or so, I get the de-shelled ones and chop them up its easier
❄️ Then with a spoon pour some white chocolate of half the cookie I do this over the bowl, and spread over half, don’t stress if its not perfectly even
❄️ Now pop your crushed up pistachios on top & let it set, you can pop it into the fridge but it will eventually set at room temperature so you can just leave them.
These are great bagged up as a gift (watch for nut allergies of course) but they look beautiful, are perfect for Christmas & aste delicious too 😋

Tips:
- If you are making a whole batch of these when you store them in your airtight container you can add a layer of baking paper in between each layer so that they don't stick to each other
- Chop your pistachios into smallish pieces so that they cover the top of the cookies well and look nice
- I personally use a spoon to spread the white choc on top, you can dip it into the white choc but i think its an easy way to break your cookie so I prefer to use a spoon but you can do what works for you
